MERMAID is home to Spitze Agency – a hybrid venue created from one central idea: to explore what experiences can develop into when fixed frameworks are broken.
The place is not defined by a single function, but by a constant interplay between design, creativity and people.
A space where drinks are developed, experiences are created, and ideas are tested in real time.
Our approach
MERMAID is built on the belief that great experiences don’t happen by chance.
They are created through details, conscious choices and continuity.
From the way a drink is composed, to how the guest is welcomed, and how the space changes character continuously – everything is well thought out.
The concept
MERMAID is more than a venue.
It is the headquarters of Spitze Agency, our cocktail lab, our meeting point and our creative space. A place created for people, experiences and ideas.
Here we host everything from private dining experiences, wine and spirit tastings to exclusive events, product launches and bespoke concepts. Each experience is curated with the same focus on detail, hospitality and quality that characterizes everything we create.
MERMAID is our playground – a living space where we challenge the framework, test new ideas and help define the events and hospitality experiences of the future.

The Cocktail Lab
Part of the core of MERMAID is our cocktail lab.
This is where new ideas take shape. Here we experiment with ingredients, flavors and techniques to develop experiences that can be shared with others.
The lab is an integral part of the house and not hidden behind closed doors. Therefore, guests are not only served the finished result – they also get an insight into the process, the thoughts and the craftsmanship behind it.
Summer Pop-Up
In 2026, MERMAID will move beyond its fixed framework through a seasonal pop-up.
Opening on June 5th – and running until October.
A more immediate and open expression of the same philosophy:
Cocktails, wine, bubbles, coffee and light snacks, DJ atmosphere and presence in more informal surroundings.
